Surprise!

Katherine decided on Saturday that she wanted to make a special surprise for Daddy. She wanted to make him a cake.

So I did what any mom would do and busted out the premade cakemix box. It called for 3 eggs....we only had 2.

So on to Plan B.

Plan B included a recipe out of the First United Methodist Church cookbook. Pinapple Cake. It didn't call for eggs and I could not believe it but I actually had a can of pineapple in my pantry! And I had cream cheese for the icing!

We made the cake and it is delicious! Katherine did a great job of measuring and stirring.

Frank was very surprised and pleased that we made something so wonderful for JUST him!
