New Recipe!

Frank and I tried a new recipe last night for a Mexican Chicken Casserole. Both of us have stuffy noses so I wanted to make something spicy....here it is

Jennifer's Cure your Cold Chicken Casserole

4 lbs of chicken (cooked and cubed)
1 can - cream of mushroom
1 can - cream of chicken
1 can - Rotel
dash of salt & pepper
1/3 cup (or so) chopped onion
1/2 cup of chicken broth
3 cups of shredded cheese
1/2 bag - Tortilla Chips
Bottle of Wine

Combine Soups, Broth, Onion, Salt & Pepper and Rotel and stir into a creamy mixture
Layer in a 3 QT glass pan in this order
Tortilla Chips (enough where you can't see the bottom of the pan)
Chicken
Soup Mixture
Cheese

Cook at 350 degrees for 45 minutes. Also can be frozen for later!

(the wine is for drinking~while your cooking, eating and cleaning!)
